邓鹏鹏,男,中共党员,武汉大学博士,讲师。研究方向为食品软物质结构与功能。主要研究内容:(1)Pickering乳液;(2)多糖复合凝胶;(3)食品包装材料。近五年,先后在Carbohydrate Polymers, Ceramics International, Journal of Biomaterials Science, Polymer Edition等国际知名SCI杂志上发表论文8篇(1区论文7篇)。
